Steam in house oven

Hi i just make today's bread bowls in my house oven and before I start the oven i trew and a loaf pan and start preheating the oven at soon the oven was preheat i put it my bread and a cup of water in the loaf pan for the steam and i baked with the loaf pan until was done

The bread came crusty and crunchy but 3 minutes later no more crunchy in the crust 

What I did wrong?

The steam inside the bread softened the crust while cooling.  To get a crispy crust again preheat the oven and put the bread inside for five to ten minutes.

If I understood right let it cool down and baked again for a crispy crust or just going to came soft again every time cool down

With the second bake, it will stay crispy for a long time, also when cooled.
