Hay yall,

Old guy new baker. Bought a grain mill, a few books and some wheat berries.

I am about to attempt the Tartine Bread country loaf.

I am really liking the whole grain approach, I have made einkorn pancakes, khorasan biscuits.

I have made yeast sandwich bread using sonora white, red fife, turkey red, and khorasan I like khorasan the best, red fife next and sonora white the least. That was a surprise because I have always preferred white bread, I really like that red fife too. I am not saying I do not like the sonora I just do not prefer it.

Once I get the country load down, I need to work on a french bread formula. French bread is a must with gumbo.

I'm having fun, it has not all been great but so far none of it has been "bad".

Welcome!  Glad you found this motley band of bakers.

That's cool that you mill your own flour. Many here do too. I have some milling equipment that I haven't used in about 1.5 years:  a 3-roller hand-crank grain cracker, and a Vitamix blender.

I also have a hand-crank WonderMill Jr, that I haven't used in even longer.

I also included a partial list of other home-millers on TFL whose efforts and postings I admire.

Lately, I've just been using Bob's Red Mill stone-ground whole wheat (red grain). And did a lot of experiments with various types of durum flour from my local Patel Brothers (Indian grocery store.)

Thanks for the welcome my round bread baker thingy from Breadtopia came in today so very soon I will bake or burn a country loaf, we'll see.  : )

might want to mix in some of the rice flour with sifted out bran.  Makes for a nice rustic look.  :)

I did some lock down shopping in the grocery store today and saw a big pile of assorted cane bannetons.  I so wish I had my phone for a picture!  There was a new shape between round and oval.  I was so tempted!
