Anyone add whole grain flour to journycakes?

I found out last after watching a Townsends Video on Johnnie Cakes. By whatever name they look like thick and denser pancakes without leavening.

So I open a Box of Jiffy's and try it on the Stove. It works, but works way better if a few teaspoons of flour is added to the batter.At first I used oat flour made from rolled oats with my blender. That is what I had on hand...

The purpose of this is to slow the spread of the batter on the skillet or Grill. I also add the butter or margarine to the batter as well. It just come out much better. 

I brought some Whole Wheat and used that last night and the day before. Improves the taste.

Note: For those who do not know what Journeycakes are, they are simply a flatbread that is cooked on white ash, hot stone, or even a board with the cake expose to heat. AKA Ashcakes.

They are made whatever grains are grown in the Area. I thought this may help.

maize. The closest I come is corn fritters.  Although I am constantly testing flours by making pancakes. Pancakes can be made from just about every grain, the textures will vary.  It's a good way to investigate flavours and grains to taste what you like, test their gluten, combinations with other flours/grains and go from there.

Buckwheat? I never seen that for sale anywhere locally. But then again I only purchased Jiffy's cornmeal muffin mix. You know the small boxes you buy for ~$.50 cents.

BTW. Is there a Flour provider that doesn't charge $20 for shipping flour to you?

I would have to order multiple bags of flours to be worth that.

This is an international site. Are you an American? Have you checked Amazon? Do you have the Prime service? I just got a kilo of rye kernels shipped "free" the other day. Do you live in a city? I have three major grocery stores around me and I can get 20lbs of flour between $5 on sale and $8.50 Canadian regular price. I walk there and carry back under my arm or in a backpack or using a shopping trolley. We also have lots of public transit here if I were unable to walk.

You need to give more info so people can help you.

Yes I live in the US. Check Amazon what they have available is high priced then what flour should be if I can find it on Amazon. Just went to Walmart today, and they had a limited selection of Flours and Meals.

I ordered from Azure Standard. 8lbs of Barley, 5 lbs Dark Rye, and 27 oz  Buckwheat flours. Cost me ~$39 something cents total and that is with the shipping fee.

The barley and buckwheat couldn't come in the standard 4 or 5 lbs bags?

I did a flour run myself today. Austria has a few more options than Walmart. Bought a medium and a fine rye, medium and fine spelt, wheat bread flour, AP wheat flour and what looks like barley groats from ALDI. 99¢ a kilo for most of them.
