Found a little gem at the end of last week on Available for Barter Fremantle and Surrounds and although Frances said she was happy for me to just have it i said i would bake some Cinnamon buns on the Monday, unfortunately she is gluten intolerant but her son and husband are not so i hope they enjoy some of these.

 

holds just under 2 kgs, perfect for when i have just opened a bag

note the tray is well buttered to prevent sticking and combine with the sugar and cinnamon to make the gooey toffee like bottom

ready for the oven and filling the pan

out and about to be slipped ontothe cooling rack

Your cinnamon buns look fabulous Derek.  I’m sure they will be happy with the barter, they did well receiving your delicious baking.

Do you ice them or spread a syrup on them?

Hi Benny these ones were just washed with the freshly squeezed lime juice and sugar micro waved to boiling point and brushed on for the shine, and finished with the sprinkle of caster suagr. I sometimes have iced them with a variety of toppings. I used the tangzhong  with this too. 30g flour and 150g water.

dough

flour 470g  (30 g t) 100%

salt 5g 1%

butter 25g 5%

sugar 50g 10%

milk powder 10g 2%

malt liquid 10g  2%

water 120g (150g T) 54%

dried yeast 10g 2%

egg (1)  50g 10%

dried fruit 150g 30%

This is about a 2 hour dough if finished at 27C

This was using cheap supermarket flour at less than 10% protein!

I love these. We call them cinnamon swirls over here. A favourite for sure.

There's something about cinnamon, that I really love. Don't know if it's the warmth, taste or the health benefits :)
I've a question about the recipe you shared (thank you!):

flour 470g  (30 g t) 100%
salt 5g 1%
butter 25g 5%
sugar 50g 10%
milk powder 10g 2%
malt liquid 10g  2% <- can i replace this, say, with molasses or honey?
water 120g (150g T) 54%
dried yeast 10g 2%
egg (1)  50g 10%
dried fruit 150g 30%

And you've got one pretty flour container there, Derek! Instead of a dedicated jar/container for flour, I use 2.5kg ice cream or whey powder tubs!!

i love using malt  but its only a small amount if you are unable to obtain it don't worry,  its not a critical ingredient so could be omitted completely. Either of the suggested alternatives would be fine but there is enough good stuff going on in there anyway. Brew shops are a great source of malt extract, the dark malts are best for our use too, it is available in powder form but it is Hygroscopic so attracts moisture. you can often buy very cheaply dry malt that has set into a slab, just needs soaking and can be used in bread making. 

Yes i was happy to pick up the pot flour container and the lady was super happy with her trade and so pleased it was going to someone that would be employing it for its designed use! I also have some plastic containers but the pot is perfect for in the cupboard. Good luck with these  i look forward to seeing your rendition.

Home made bread is a great currency on some of the local Barter sites, along with Red wine and free range eggs. 

Cinnamon has some great qualities i use it to help strike plant cuttings just dip the ends in and stick in the ground!

I was having no luck finding malt syrup, assuming that is the same as Derek’s malt liquid.   I eventually found Barley Malt syrup at Whole Foods, so Christi you can buy Barley Malt syrup there.

I’m gonna look for it in my area before getting them from the links you provided. I only knew malted vinegar or Horlicks/Ovaltine or beer 🤣 Now, I’m wonder what I’ll do when I get some of this liquid malt..
