I made a tiny drysuit for my Govee thermometer by sealing in a FoodSaver vacuum bag! Now I can put it in the proofing container with the dough and geek out over the dough temperature graphs.

But now you won't get the humidity report. Or do you only care about temperature?
You should make a second one, and stick it in the dough. May be make a dead dough, cycle it between proofer and fridge and produce some plots.
