True Grain Artisan Milling - New Chicago-based Mill

Hello all,

I haven't been too active here in a while, but I used to come here all the time to learn about home milling. Several years ago I became obsessed with milling my own flour, meeting local grain farmers, and learning everything I could about artisan bread flour milling.

I'm here because I would like to share that I have turned this hobby into a business, and launched True Grain Artisan Milling in Chicago. Last year, after COVID hit and the supermarkets were sold out of flour, I started to get dozens of requests on social media to mill fresh flour for my neighbors, friends, and others in the area. This kept spreading and spreading, and eventually, after a few local news stories, I decided to launch True Grain Artisan Milling. We are buying the best quality grains available in the Midwest (We have some incredible organic grain farms in this area), and milling them on American made granite stone mills. It is such a thrill to get to turn my passion into a business, and to share my craft with other passionate home bakers.

That is so great that you are able to do that! I jumped over to your website to check it out (I love seeing what is out there) and noticed something. The site shows the flours with description of their respective qualities and price, but does not list a weight. The consumer can't tell if this is for a 1 lb bag, 5 lbs, or what. It might save you answering questions if you can that updated?

It says 3 lb on the bag. Assume that is correct? That was my first thought too.
