Breads from La Brea Bakery Book jacket; what are the rolls

Hello,

I am new to this forum page.  I have been baking sourdough from Nancy Silverton's book for many years.  I have been pretty successful and have kept a starter for several years.

But I Have always been so curious.. what recipe are the rolls on the left side of the cover?  They look like a twist is added and they have crusted cheese as well.  There is no mention of them in the book.

Any ideas on the recipe or how to replicate them?

Thanks,

Janice

They look like a simple yeasted dough, cut into strips and twisted. Maybe put some filling between two sheets of dough and cut into strips. Top with cheese and bake. Maybe start with a foccacia dough. They shouldn't be too difficult to replicate.

Thanks Bani.  That sounds like a good place to start.

To me looks like a mini baguette rolled in sesame seeds or grated cheese, split down the middle keeping ends uncut, like a button hole,  twisted and pulled to elongate.

Could be a simple twist or one end tucked thru the "button hole."

Thanks Mini,  I haven't tried a button hole before.  Thanks for the idea.
