I have been looking at the recipe for the baguettes by Anis Bousbsa listed in this forum (see below) and was interest in making it with fresh yeast
Flour 500 gms (about 3.85 cups of AP flour)
Water 375 gms (about 13.25 oz or about 1-2/3 cups)
Yeast 1/4 tsp (for instant yeast)
Salt 10 gms (about 2 tsp)
Googling I came up with 1/4 tsp instant yeast is approx 1 gram fresh yeast, is that correct ? (Im not used to using instant yeasts)

I used this page:
0.25 tsp instant yeast -> 0.775 grams
instant yeast : fresh yeast -> 1 : 3
you may use around 2.3 grams for your bake.

I realise now I forgot the conversion factor going from instant to fresh yeast. That's a very handy conversion table !
