today I am baking with my friends from TFL ?

I know I am a bit crazy, but as I wrote notes down I realised what I was doing.

First off the the ranks was Abe! (mid week bake)

 2nd was Danni (Danni’s version of European Peasant Bread by Trevor Wilson)

 3rd was Ru’s seeded sourdough loaf

4th was my yeast water/sourdough - just a plain white using Rosie my YW.

Today I concentrated on really building dough strength and developing the gluten well. to that end for Danni’s formula I did 150 slap and folds, for Ru’s formula I did 200 slap and folds before I remembered the salt so I added little more water and the salt, did a few s & f to incorporate and then another 20 slap and folds - phew I need a rest! Finally for the YW dough I did Rubaud for a couple of minutes then 240 slap and folds.

It was really interesting as I could actually see and feel how the dough became smoother and less sticky and sat up proudly in the bowl rather than slumping everywhere.  These doughs are still BF - even though I have the heatpump on they are slowmoving.

Abe’s formula was low hydration so all it got was 4 x 10-15 stretch and folds.  this dough is quietly sleeping in my fridge until tomorrow am when I will shape, proof and bake after the others. The other 3 doughs will join Abe sleeping it off over night! 

So far it has been busy ? but a good day baking with my friends ??

You're busy! Don't know how you manage this but really can't wait to see them all.

It’s a challenge some times for me to keep track of a single bread. I have no idea how you can juggle so many.

yesterday I forgot to write one set of s&f down, panic... then reread notes and saw my comment - rested YW to do s&f on other 3.....

But I plan it and do things one after another. then try and bring s&f into line with each other so it gets simpler.  Ihate the dishes though!

It's so amazing, this group. I feel like I know so many of you, though we've never met in person. We learn so much from each other. I find myself telling family members what some of you have been doing, as though they should know you too (and care what you're doing). :)

and supportive, and yes TFLers are definitely like an extended family.  Yesterday when I was doing notes it was so much nicer saying Danni or Ru or Abe rather than #1, #2 etc.

Will update shortly Wendy and Ru.

Ru is nearly out of her hot spot but Abe is still slow to join but is getting there. Danni & Rosie have turned out well.  will be back soon

I've only just (barely) started managing to make two different loaves at the same time! 

Can't wait to see the result. I'm sure it'll be great.

we had one of your loaves for lunch, and yes it was still warm!! but very very nice. soft crumb, loved the flavour, no sourness at all.  theholes in the crumb are I suspect from my water additions! this crumb is from the loaf I posted on your thread.  will try again but would do higher hydration but that is all I would change.

great inside and out.  Baking with friends is much better than baking without them!  I hope you are feeding an army too - that is a lot of bread!  Time to open up a bakery:-)  Well done and happy baking Leslie!
