Bread bowls!

It was my daughter's baby shower on the weekend, and I made good old spinach dip. Of course, you need to put it in a sourdough bread bowl, right? So I added one 123 sourdough boule to the weekend bake. It turned out to be so good, I'm making smaller bread bowls (or boules, if they don't want them for holding soup!) for the subscription list customers for Wednesday. Nice creamy open gelatinized crumb, but I didn't get a crumb shot because I hollowed it out at the shower and it was devoured!

Sometimes it's nice to get back to basics. :)

  • 150 grams of 100% hydration active starter
  • 300 grams of water
  • 400 grams of bread flour (Roger's Silver Star)
  • 50 grams of sprouted whole spelt flour (Anita's Organic)
  • 9 grams of salt

30 minute autolyze; 5 hour bulk ferment with 3 or 4 stretch & folds; overnight retard in the fridge; shape & proof for a couple of hours; bake in a DO.

I love spinach dip and that is the perfect bread to go with it even though my daughter swears that it has to be pumpernickel.

A hint for the spinach dip if you use the recipe that has Knorr vegetable soup in it; try the Knorr minestrone soup in it instead. It does something amazing to this dip by adding a bacon flavour to it. Don't pick out the pasta, it softens and you don't know it's in there. 

A friend of mine couldn't find the vegetable soup for her dip and substituted the minestrone. Those of us who tasted that dip nearly 30 years ago have all made that dip with the minestrone since! It is that good!

Thanks Danni, that's a good tip! Does the minestrone have actual meat in it? My SIL is a vegetarian so the vegetable soup made more sense in this case. I was a little reluctant to make the dip because it seemed so 80s, but it still seems to be a favourite! And of course my contribution to the shower had to be something with bread, right? :)

1 cup mayonnaise 

1 cup sour cream (thick)

1 can chopped water chestnuts 

1 pkg frozen chopped Spinach (thawed and squeezed dry)

1 pkg Knorr minestrone soup

Mix and refrigerate for a few hours. Serve in hollowed out sourdough or pumpernickel boule. You use the cut up insides to scoop out the dip. 

I have no idea if you can get these ingredients where you live but this is what spinach dip means in my neck of the woods.

I'm all for individual sized Spinach dip bowls too!  We forget hoe great the old time dips are until you make a bread to go with them:-)

Yesterday I baked little sourdough boules for soup with the same recipe. They turned out nice too!
