How much dough can be mixed in a 30 liter mixer?
Hello,
I recently bought a 30 liter mixer made in Brazil. I plan on using this mixer for bagel dough which is about 50% hydration. Any suggestions on what my max weight should be?

I've got a 30 litre Univex. Haven't made bagel dough in it, but I have mixed up to 10 kilos (22 lbs) of dough at, say, 65% hydration in it without any trouble. Can you find a manual or any information on it online? That usually gives the max weight for different hydration doughs.
