Panasonic SD-2500 & Rye Bread

I want to bake rye bread in my SD2500 Panasonic Breadmaker (Mother's Day present). At a glance, I do not see a great difference between this model and SD25001 which has a rye bread kneading blade. I have ordered a genuine Panasonic rye kneading blade and hope it will work. Have you tried baking rye bread in SD-2500?

Yes, you can do it. I have the SD 2500 as well and I scoured the forums for weeks to find out as much as I could. In the end I bought the rye paddle and did one of the recipes out of the book and it turned out fine. At some point I intended/intend to add a greater proportion of rye flour bit by bit and monitor the kneading (to check for any labouring). Circumstances so far have prevented me from doing this, but  I will get round to it. If you beat me to it, please do post :-)

Great. Start off simple, like I say, one out of the book. Then adapt it for sourdough, biga or Poolish, whichever is your style. Then eventually like I intend; build up the amount of rye and watch it until you either get to the amount of rye you want, or it labours; it may not labour at all, I'm guessing. Remember too that rye does not really need kneading. I am presuming that the spaces between the prongs are to make it more like a stirring process rather than kneading.

Hi MariaJP, make sure you are using the tye paddle. Place all the ingredients in the pan and do not turn on the machine for 1 h. Then turn it on program 2. It will knead for 15-20 min and then rise for 1h. cancel this program at the end of the kneading process and turn program 14 for 1 h. Thats as close as you can get. I baked rye bread using this and it worked well

Hi there; I tried this over the weekend, bit it didn't work out well at all. Should I have not let it rise, and removed immediately after the 20 minute kneading process, then baked for an hour?

Mine turned out stodgy and sunk in the middle - a complete disaster! Any help would be appreciated!
