What size tin for straight bread?

Hi,

 

What size bread tin do you use to get it a nice straight shape? Im using a 2lb tin and the shape is coming out like a mushroom.

Well, that all depends on how much dough you are using and what size and shape you want your loaf to be. Personally, I find a lot of tins too small and too shallow. I rather like these tins

I find these tins take about 500g of dough, which rises above the top but doesn't mushroom and is a good size for my toaster.

Hi,

 

Aren't they a bit small? My current tin is 25cm long x 13.5cm wide by 6cm deep.

I thought you said you were using a 1lb loaf tin, these are 2lb loaf tins, but they do also do a 3lb one.

Sorry i mistyped. (corrected now). I think ill have a look at some deep tins as that will solve my mushroom problem i think

I think if your current loaf tin is the measurements that you suggest it is much bigger than a 1lb tin. If you search Amazon there is a huge 4lb tin as well. But I am pretty sure your problems are simply too much dough for your tin.

Sorry we are cross typing and it is getting  garbled! But, yes a deeper tin or less dough is most likely the answer.

Yeah , I'm going to order that alb one now as its similar in length to the one I've got now but nearly twice as deep and a little wider too so if i do my normal 500g mix , will fill that when risen and not look like a mushroom lol

It's not cheap but I like this one. It's the standard commercial size.

Hi,

That looks ideal. It isn't non stick is it? The one i have at home is non stick and i literally ti[ it over and the bread falls out. I wouldnt want sticking problems if i went to one of them.

Never had any problems with sticking. But I always rub the inside with some oil.

That bread looks amazing. What tin did you use? What temperature and how long did you cook it?

The tin I linked to..

err my cooking is not straight forward. Pre-heat to the max (230C fan for my oven). Apply steam and turn oven off for first ten minutes. Back on at 205C fan for 35-40 mins.

EDIT: about the steam. I have a pan on the bottom of the oven filled with ceramic baking beans which I pour boiling water into.

Sounds good. Your bread looks a lot lighter in colour than mine does. Mine looks very brown as it comes out. I have a fan oven that goes to 250c but i put it at 200c so equivalent to 220c and bake for 25 mins and nowhere near as light as yours.

The tin delays the colouring as does the steam. I would normally cook it darker than the one pictured. I may have pulled it out early for whatever reason... This bake was a while ago.
