Fatirat al-toffah wa al-toot (Blackberry and apple sweet pizza)

A fruity flavor squares and low in fat.

Dough:
1 1/2 cups all purpose flour.
1 1/2 cups whole wheat flour.
2 1/4 teaspoons yeast.
1 teaspoon backing powder.
1 teaspoon vanilla essence.
1/2 teaspoon vanilla powder.
3/4 teaspoon salt.
1/4 cup sugar.
1/4 cup low fat yogurt.
1/3 to 1/2 cup water.
1 1/2 tablespoon oil.
2 egg whites.


Topping:
1/4 cup low fat cream cheese.
1/2 cup blackberry jam.
3 apples (peeled and chopped).


Crumble:
1/4 cup all purpose flour.
1 tablespoon butter.
1/2 teaspoon vanilla essence.
2 tablespoons sugar.
1/4 cup almonds, chopped.


1)To make dough: mix all the ingredients; knead for 10 minutes, until you get smooth dough. Let rest for 40 minutes.

2)Press dough into a baking pan, spread with cream chesses.

then blackberry jam,

and top it with chopped apples.

3)To make the crumble: work butter into flour then add sugar, vanilla, and almonds. Sprinkle the mixture on top of apples.

4) Cover and let rise for 30 to 40 minutes.

5)bake at 350 F . for 25 minutes or until cooked and browned.

Do you know if vanilla essence is the same thing as vanilla extract? Extracts are alcohol based, not oil based. The term "vanilla essence" makes me think of "essential oils".

What size baking pan did you use? I guess you can tell I hope to make this one day. :)

Vanilla essence isnt real vanilla....its kind of the essence of the the extract......Vanilla essence is nothing like essential oils. It is conciddered a "fake"

 

Vanilla extract is real vanilla. it is made from the vanilla bean pod and seeds and it is extracted from the actual seeds.

 

Vanilla extract is a little stronger than vanilla essence and if you buy vanilla concentrated extract this is twice as strong. I use the concentrated extract. It tastes better and is natural like the extract.

 

Sorry about my ramble, I am big on real "whole" foods not "imitation" or man made....you know?

Vanilla essence and vanilla extract the same thing I think. I've never seen any vanilla extract with alcohol in my country, so I don't know if there is any different between them.

Thanks for the pictures, Meedo.  I hadn't thought about it before, but it makes sense that alcohol based extracts wouldn't be sold in an Arab country.  Since the alcohol bakes off, we don't think of them as alcohol, but rather as a flavoring ingredient.

I'm still going to try this bread one day, even with a substitution. :)

vanilla extract is alcohol. It is distilled from vanilla bean so it is kind of it it would get you tipsy or drunk.....................depending on your constitution.

Vanilla essence isnt the same, its an imitation, like immitation lemon or almond essence.

It's so delicious-looking, Meedo. You and Zainab are amazing bakers. Stupid question, but I never paid attention in school--do blackberries grow wild in Arabia? (Dates certainly don't grow in Vermont.)

I have 2 deferent kinds of black and red berries growing in my garden, so every year I picked between 30 to 40 pounds, I use half of this portion to make jam and frizz the other half to use it with smoothies or pancake or ……

I think it gives between 15 to 20 jars of jam; that's a lot, so I give some to my relatives and friends.

In Arabic language we call it ( toot aswad) which means in your language a blackberries, So it's a little bit confusing , But thanks to correct me, And for the information.
