Dark rye flour vs berries

While shopping for dark rye berries I ran into an incongruity. While rye flours are sold as light, medium, or dark, the berries are not. Only just rye berries.

So how do I know I'm buying berries suitable for making a dark rye bread which specifies dark rye flour?

Since the U.S. has no standardized grading system for rye flours, each miller names their flours as they see fit.  In spite of that, the consumer can generally expect that the lighter the flour, the lower the bran content.

So, depending on the miller, dark rye flour might be whole rye flour or it might be whole rye flour with added bran.  Medium rye flour will have some of the bran removed and light rye flour will have even more bran removed.  White rye flour will have all of the bran removed.

Unlike wheat, rye grain does not come in white and red varieties.  If you buy rye grain and mill it, you will have whole rye flour, aka dark rye flour.

Thanks Paul, I guess that makes sense. I got rye berries from our local coop, which has the best selection of whole grains in town, and they certainly don't look 'dark'. Whereas some of the dark rye flours I see pictures of are quite dark in color. Hence my confusion.
