Theres something about combining pastry cream with brioche, the pairing works good. I'm surprised there isn't more of it. The brioche works best if it sits overnite in the cooler to remove the first rise in a controlled slow proof of sorts.
Muffin tin is prepped with pan spray and a good dollop of sticky bun mix of butter, br sugar,honey, vanilla ext.
The apple tart technique I learned from a french couple in Florida, they did it in individual brioche molds. I used a tart pan.
