Draining steam injection on deck oven

Wondering if anyone can help. I have an d tom Chandley deck oven coming in tomorrow with rudimentary steam on each deck. Water pipe is attached with washing machine connection to long pipe which goes onto spare tap. I then have conduit pipe to drain water. However I have no drain. One solution is to cut hole in steel door jam in pipe and use expanding foam to seal but that seems a bit excessive. Surely there’s an easier way? Even if I drained it into low trough and emptied every night? The water has to flow down (obviously) so could I not set up a small sort of aqueduct into collection vessel? Or do I have to get people in with welders to do the job? Any ideas? Solutions? I’m not great at diy but I’m only getting rid of a bit of waste water. And door has to stay closed...thanks in advance
