The Black Hamster

The Black Hamster was born in Germany, the son (or daughter?) of Bäcker Süpke. I don't think he ever published the recipe on his blog, but it was reverse engineered and published on Ketex and Plötzblog, two German baking forums.

I've just made the Ploetzblog version and I'm pretty pleased with how it came out - a big solid loaf with big wholegrain and seed flavours. Recommended to try for a change, as a break from the world of open crumb,ears and bloom!

Next time I'll remember to put the sunflower seeds on the top as well as the bottom!
