Pasta Frolla

Crostata di Marmellata (Jam Pie)
I found it! Mom would make dozens of "S" cookies and jam pies, using the same sweet dough. After some research (I love the information age,) I now know this was a staple Italian, short pastry dough ( Pasta Frolla.) This weekends project: experiment with this new (to me) type of pie dough. Look for the results.

pasta frola is also a very common pastry in Argentina that can be found in every bakery but we just use sweet potato or quince as a filling, in Paraguay they use guava! Hope your project turns out great.

Good morning,

Pasta frolla filled with sweet potato, that sounds very interesting. Many Italians migrated to Argentina, bring their Italian heritage with them. Then passing that heritage to their Argentinian born. Eventually, both the new and old world cultures melded together, making for a very colorful wonderful culture!
