Small Proofing Cabinets

Short question.

I'm looking for decent quality proofing cabinets. Big enough for 3 or 4 full sized sheet trays. Easy to use, etc, etc..... Any ideas?

 

Why:

I run a commissary kitchen for 2 chains (not the rapper) of coffee shops. One is more artisanal, the other is a organic version of a Starbucks concept that is being franchised to new owners. The goal is to make the franchised locations responsible for their own morning bakes. Of course, purchasing all the frozen ready to bake stuff from us. Including our croissant line up. Thats great for me. Less to bake, less to package and deliver. 

But... Our croissants, from frozen, take about 14 hours at 70 degrees and 4 hours of 85 degrees to properly proof. I need to make this slightly fool proof for these baristas turned bakers.
