Fun with Einkorn
I found a local source for Einkorn and am really enjoying it. I'm using Tartine 3 as inspiration and it comes out delicious and bakes beautifully.
75% Central Milling bakers craft plus
25% Jovial whole wheat einkorn
7% Bob's red mill wheat germ
2.2% salt
20% mature starter at 100% hydration
80% water
Usual Tartine process.
It does not last long.
Incredible. How do they taste ? I've tried einkorn (jovial in fact) and disliked the flavor however that wasn't a mix as you've done here. I actually have a few pounds of central milling t70 and might give this a try but first very intrigued as to how these taste :)
Einkorn is not available locally so I have no idea what it tastes like. I could order it online but I am still working my way through the stash of flours, seeds and grains I have in the downstairs fridge.
I hope you post a crumb shot.
Here is the crumb. It is quite hearty. Surprisingly so for being only 25% whole Einkorn. Nutty and savory. It stood up well with beef stew. A great combination for a stormy night.
