Do you include the formulae of the breads that are braided in your book?

If formulae are not provided in your book, how do I decide which formula is suitable for braiding, and how much dough to use 樂樂樂?

Hi again Yippee.

Formulas most suitable for braiding are those that provide a rather firm dough. I would recommend Jeffrey Hamelman's "Bread.A baker's book of techniques and recipes". He has a Challah formula that is quite good for braiding, as he himself also says so. There you can find quantities too.
