Heirloom flour

I am a miller in Kansas that produces stone-ground whole grain flour for white and red varieties of wheat.  We have organic and heirloom products.   I'd like to distribute my flour in the Chicago area.   Where do you go to buy the best flour?   I also mail order.   www.farmerdirectfoods.com

Do you make retail sales to the public?  If you do, the following questions apply.

Although you mention mail ordering, it appears that the only way to place an order is by telephone, correct? 

What are the prices for your products?  What do you charge for shipping?

Why is the traditional whole wheat flour not available in 5 pound bags, like the other flours?  While there's no mention of the bag size for the wheat berries, I presume that it is a 50 pound bag.  Is that correct?

Are there minimum order amounts?

Can a customer pick up an order at your office location?

Baker Miller is supposed to be a bakery/restaurant + grain retailer, but they lacked retail flour last time I was there http://www.bakermillerchicago.com/

In summer time, most neighborhoods have farmers markets. Generally there's at least one bakery there, though I'm not sure I've seen flour sold.
