Is anyone using the komo sifter or Bosch sifter to get a high extraction flour in the 85 percent range for recipes in the Tartine books ?
My friend is working her way through Tartine 1 & 3 Julie, Julia style. She likes her sifter, but says she's had a learning curve dealing with it. I believe the bran is left in the bin that sits on top of the machine, causing some problems getting it off the machine without scattering it all over. However, she is mostly happy with it.
I'm on the verge of getting a Komo & plan to add a sifter later when I've recovered from the financial outlay.
