what does this button do?

What is the black button in the middle for? This is a stone deck oven, no steam function, and the other two dials I know are for the upper and lower heating coils. Just can't figure that one out...

I doubt the oven has a self-destruct feature, so you could just turn the black knob and see if you perceive an effect. 

If you know the make and model and the manufacturer has a web site, you might find a user's manual online.

I don't know what it does, but the pictogram suggests it is a vent - you open it to release heat and moisture from the oven.  Can you hear any doors or flaps move when you turn the knob?

It looks to me , also to be the exhaust damper control. If so, it's great that it has one.
