Another Big Green Egg Question

Still haven't used the Big Green Egg yet.  I have the large version.  I am going to make my first loaf of bread in the oven, but am not sure, yet, whether I will bake in a dutch oven, pan or what.  I don't have a baking stone for the Big Green Egg, only for my home oven and the stone won't fit the egg.. 

My question is, from reading the manual it says not to use the oven over 360 degrees for the first 2 or 3 cooks.  So, I have no idea how long to keep the bread in the egg at that temperature since I don't bake in my oven at that low temp.  I'll be making a batch of dough that I can make two loaves.  Any ideas?  Normally in my oven, I bake at a high temperature at least 450 for 35 minutes and the internal temperature is always at least 205F

why not just light it without cooking anything in it... that will give you practice of lighting it and controlling the temperature without the pressure of having to cook anything.

I bake bread often on my two eggs one XL and one LG . Make sure your grills are to desired temp, I usually bake my bread at about 390 to 400 degrees for about 20 to 25 min. Give the loaves a180 degree spin about half way through your baking time, for even baking.When the time is getting close check with an instant read thermometer look for 190 to 200 degrees. One can hardly make a mistake with your green egg when you get rid of the fear of failure.When I started egging in the driveway life has not been the same, have some fun, drive that egg like you stole it.

Just cook something else a few times first. I wouldn't lower the temp I'm baking bread at. Do you have the plate setter? You will want to bake loaves indirect so you need the plate setter. And I do recommend the BGE pizza stones. Very sturdy and able to withstand high temps for things like pizza at 800+

Although I always bake bread to temp, not time even in my home oven.

Yes, I do have the plate setter.  I just went out and bought the BGE pizza stone. Thanks for the tips.  I don't know why I am so intimidated.  I hate using equipment that I'm not used to but I'm going to forge ahead and just do it.  Thanks for the Temperature settings.  I can't wait to try Pizza too!  Bread will be first though.
