Waring Commercial Stand Mixer

Just curious if anyone has some hands on experience with this? The posts I've been able to find by searching don't really show anyone that has given them proper use.

I have experience with its cousin, which is, in reality a China-made Kenwood. I love this one.

Actually looks more like a Cuisinart. Virtually identical. I guess it's probably more beefed up though.

At one point the Cuisinart and Viking were made by Kenwood. The blades were common to all.

It does seem to be a common looking product, but no one ever seems to have any experience with it. Guess I'll be doing lots of my own testing.

So after my first use....

I just made a dough that came out to just under 1600 grams or 3.5 pounds. The dough stirred together well at speed 1, but once the flour was hydrated, and I turned the speed to 3 to start the kneading process, the dough crept up the dough hook and just sat there. The clearance between the hook and the sides of the bowl (not the bottom) are too far and the dough just spun and spun and spun.Maybe a wetter dough would have better luck. This was about 65 percent hydration, so on the dryer side I suppose, but definitely not bagels or anything.

The machine definitely had a ton of speed and power to go. At speed three it was crankin along and the dial goes to 12. It's quite loud and clunky, and it feels cheap though. The release for the arm that raises and lowers never works properly. More reviews to come I suppose.
