organic flour new zealand

hi there, is there anyone out there from NZ who has experience using NZBIO GRAINS organic flour?

im comparing different oganic flour in an effort to choose a supplier for a small scale bakery im setting up.

I cant seem to get the BIOGRAINS flour to perform, with less volume, and keeping time but before i give up hope of using a local product i thought id ask:)

I've been using BIOGRAINS organic flour for a few years and have had the same experience: fairly dense loaves. I had put the poor performance down to organic wheat having less gluten forming proteins. I too want to use a local organic product and intend switching to Millmore Downs' wheat to see whether I have better luck; apparently they supply many bakeries.
