so...what exactly is a simnel cake? (Is that marzepan on top?)
Simnel cake is made in UK some times it is made for Easter or some people make it for Mothering Sunday, not to be confused with Mothers Day.
It is a fruit cake, with half the cake batter into the cake tin and a layer of almond paste on top of that followed by the remaining cake batter and baked.
When cold it then has a layer of almond paste/marzipan on the top and for Easter it has 11 balls of almond paste round the edge of the cake to signify 11 disciples.
Most times the very top of the cake is put under the grill to just tinge the balls a little......... qahtan
