I was there last month also and bought some of the flour. They told me it was the same flour used in the Miche. Not sure what else to do as far as the recipe goes though. 

can you send me some of it? i would love to create a sourdough starter using it as my mother seed? just a few teaspoons is fine. if you agree i'll privately email you my mailing address.

do you know where the flour was imported from? france/canada?
