Cranberry Walnut Bread

I wanted to make this Cranberry Walnut Bread for Thanksgiving but the timing did not allow me to do so. This is basically the same bread as seen at Bread cetera  and a slightly different version at WildYeast. The bread went together with out any real hitches. I did deviate from my usual methods...I mixed the bread by hand using the French fold method seen at Steve's site and here. It worked very nicely until I added the walnuts and presoaked cranberries. The dough got very sticky from the extra moisture on berries even though I did blot them dry. It was just a temporary setback...the dough absorbed it in a short time. I shaped the loaves and tried the fendu method for the first time and was very impressed how much they opened compared to the slashed one. The bread had a nice crumb and taste.

I too have made this loaf

I too have made this loaf once before using the recipe from breadcetera! I loved it a lot! I must say your loaves like great and hope you enjoy them! The fendu split looks wonderful by the way, I'd say it was a good choice for these loaves.

That looks delicious! btw what the "fendu method" is, Google doesn't help :)

Fendu which means "split" in French is a shaping technique. you can see how it is done at Wild Yeast. It is very easy to do and you get very nice results...

Beautiful breads, Cap'n B!

This bread is also wonderful with dried sour cherries substituted for the cranberries and pecans for the walnuts, btw. But, you probably saw that variation on the WildYeastBlog.

Thanks...I am not a big fan of cherries

I am not a big fan of cherries...I saw this at WildYeast and at Bread cetra both have cherries and pecans...but i used the later because he used less yeast and sourdough in his....actually next time i will leave the commercial yeast out all together...I love cranberries....
