Pain de Provence - absolutely amazing!!! SO good as toast! (but, yes, I really need to work on my scoring, not just my usual complete degassing of a bread as I attempt to slice...)
...I finally decided it was about time (as I started bread baking last November or so?) to try to develop my own recipe. And I chose the obvious. With the reference of numerous other bread recipes, I ended up with my Sweet Green Tea Bread. (The glaze was stolen and slightly altered from Beth Henspengers Sweet Vanilla Challah (so good!!) in her book Bread for All Seasons) Anyhow, here was how it was supposed to go:
And... here was how it really went. I forgot to put in the butter and went very much off schedule for near the ending moments of the final rise I ended up having to leave the poor bread on its own for around three hours... although I did pop it in the cellar to try to slow rising! Despite that it turned out wonderfully and the smell that filled the house was heavenly! Now if I were to make it again... I think I would cut the ground green tea down to only 2 tablespoons, I have to admit there might have been just a bit too much. Please, if you have an advice for improving my recipe please, please reply! It is probably in dire need of improvement!

I like the Spinach Cheese Boule too. It "looks" yumy and must tastes yumy!

I did try your recipy today and enjoyed the results.
I used 3 different types of tea and the green color of the powder tea went well.
It was good to wait longer for the starting mix!!!

Very nice looking breads - I especially like the green tea bread. I will have to try one of these sometime soon.
Since you asked for advice, Here's what I see that I can try to help with (I'm no expert, take my advice with however many grains of salt as you care to):
If your breads are deflating when you try to score, it might be a sign that you're proofing a bit too long. Try scoring/baking a bit sooner.
Your preferment contains much more yeast than I generally use, and is given much less time to pre-ferment than I like to give. I usually use about 1/4 tsp of yeast in my preferments and let them sit overnight before combining them with the other ingredients to make my dough. I do tend to also include some yeast with the main dough (usually about another teaspoonful). The longer fermentation allows more flavor to develop. That said, you've got a lot of flavor here with all the green tea in this bread, so perhaps a preferment isn't even necessary.

Thank you for the advice! I'll try that idea with scoring, I often forget about bread and lose track of time... (recently I discovered some bread dough which I had put to rise in a slightly warmed oven- three days later. I forgot I had put it in there and had just assumed that someone had decided to toss away my dough.)
