Sourdough Cookies?

Just thought I'd share my opinion on the oatmeal raisin cookies that incorporate extra sourdough.  They were a little bit yucky to my taste - but my kids and neighbour loved them.  What I found yucky was the distinctly odd buttermilky sour flavour in the cookie, and not rich/chewy enough despite the cup of butter (recipe called for shortening but I subbed).

There is a discard recipe I love, the KA flour discard waffles - they were super with ice cream!

I make gluten free sourdough breads as well as teach other gluten intolerant people to make them. I am always experimenting with recipes and have, on a number of occasions, tried to make a sourdough sweet bread. I find the sour taste most definitely "competes" with any mild sweetness or fruit taste present. Sometimes I use quinoa flour and the bitterness of that plus the sourness of the sourdough is hard for any sweetener to balance out.

I have found that using a starter on the less sour side works well, coupled with using a banana and a bit of stevia.

I chuckled a bit about the sourdough cookie comment.  I just took out the last of a batch of sourdough p-nutbutter cookies.  They are my favorite of the several such recipes that I have collected.  They are  not too sweet.  This time I added 3 tablespoons of cocoa to the batter.  The kitchen still smells like Reece Cups.

I love this site and have learned so much from the different posts.  I have to slow down as there is just two of us and I can't bake everything.

Sourdough cookies

I use an old fashioned Alaska potato sourdough starter that is about the consistancy of a batter.

Sourdough Peanut Butter Cookies

1 cup starter

1 cup butter

1 cup brown sugar

2 cups AP flour

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon vanilla

2 eggs

1/2 teaspoon salt

Mix peanut butter, brown sugar, and flour.  Add butter and remaining ingredients; form into small balls and press down with a fork.

Bake at 350F for 12 - 15 minutes on an ungreased cookie sheet.

I use a small ice cream type scoop as it is faster. Then do the fork thing.

My two shih tzus beg for these if I don't put chocolate  in them.

Good luck and thanks for asking about them.  I enjoy working with the sourdough.  I've baked and cooked since I was 11 and in two months I'll be 67. I don't believe I've ever had so much fun in the kitchen.
