First loaf from Reinhart's Whole Grain Breads

Received this book as a Christmas gift from a relative who really enjoys my bread :)  Yesterday I started the first recipe in the book: 100% whole wheat sandwich bread.  My last three attempts at the 100% whole wheat bread in The Bread Baker's Apprentice were failures, so I was hopeful he had tweaked the recipe and technique.

 

Baked it today and had it with dinner.  My wife claims it's the best sandwich bread I've ever made!

 

 

Yum :)  The overnight autolyse and combination of soaker and biga really seem to have made the difference.

that looks perfect. i made two loves of his sandwhich loaf, which both turned out beautifully. i used a wild yeast starter that a reliable home baker friend gave me. it was healthy, easy to encorporate into the recipe, and very tasty.

however, due to lack of clarity about what to do to maintain the mother starter, and travel/neglect, the starter went bad in my fridge. so, i am ready to start from square one in the book, build a mash based seed culture, etc. happy to have found this forum! would love to hear more about what you make from that book.

That looks great. I would guess it tastes great. I have had nothing but good bread from that book.
