I learned something I already knew, but forgot. The home oven , and steel must be preheated a minimum of one hour. This pie make me happy. Worthy of The Roadside Pie King!

This pie is a thing of beauty.  Well done and I like my bottom crust that way as well!

I was in a rut, in order to get the crust perfect the cheese was burning. This is perfect.

I second the long preheat. Even longer can be better.  Sometimes I will start the preheat when I start the proof if I don't expect the proof to be excessively long.

  1. Butter the pan, with a cold stick  of butter. Oven at 450° as soon as oven ready set risen doughs in and in 12 min the blind crusts are ready and beautifully browned. Then cool and freeze and they aren’t too brown so as to mess with the final bake.
  2. ) For final bake preheat oven 375° just like for a frozen pizza. No need for a steel . Top your pizza prebaked crust . Slide into the oven directly on the rack place baking sheet next rack down. Bake til bubbly about 15 min depending on amount of toppings. 

    The picture I posted on Blog was done in the toaster oven at 375° til bubbly. Perfect. There’s no reason for high temps or preheat other than the usual 10-15 min. 

    Always blind bake crust  even if desired pizza is eaten immediately. Top and turn oven back and bake. Way less work and perfect every time. c
