Jeffery Hamelman, author of "Bread" used to have a bakery in Vermont.  In an article on the keeping ability of various breads, he writes about baking and mailing breads to the hold-for-pickup windows in various rural post offices along his vacation hiking route.

You might find some useful information and formulas in Bread Formulas, that I've collected from he-ah and they-ah.  

I grew up in Boston and lived in NYC for a while, and now I'm retired in San Diego.  With respect to down-east, you can't get they-ah from he-ah.
