I've already made banana bread four times. Each time it didn't turn out as it should have. It usually seems undercooked, but I'm afraid to keep it in the oven any longer.
Do you have a recipe that always works for you? I would be grateful for any recommendations and tips.

A search will reveal recipes, but all banana bread recipes are basic. To know if it is baked enough, insert a toothpick into the (cracked, by now) top to see if it comes out gooey, or dry. Bake until the toothpick doesn't have batter on it. If you don't have toothpicks, a slim knife will do.
What size pan? What material is the pan made of? What temperature are you baking it at?
Here is the best banana bread . You can substitute applesauce if you like . It always works perfectly year in and year out.
2c AP flour ( can use bread flour still works)
1 tsp. Baking soda
1/2 tsp Baking powder
1/2 tsp salt
375 g mashed bananas ( must weigh!)
1/3 c packed brown sugar
1/3 c white sugar
1/4 c unflavored oil
2 lrg eggs beaten lightly
3Tbsp milk
Whisk all the dry ingredients thoroughly. Mix all wet ingredients thoroughly. Fold together thoroughly. Use PAM or butter to grease pan unless using a reliable non stick .
9 x5 or 8x 4 IT MAKES A DIFFERENCE. Glass or metal makes a difference.
Bake a 350°- at least 60 min. Cover lightly with foil if getting too brown. I like the bigger 9x5 glass . As Moe said take a clean table knife and stick it straight down in the center of the loaf almost to the bottom. Pull it out. It should be 100% clean. If not add 10 min. Check again.
If all your ingredients are cold it will take longer to bake. So set everything out an hour before measure everything and let set before completely mixing.
