Made as is with the following substitutions for sourdough:
Reduce milk by 50g
Reduce flour by 50g
No yeast
100g active bubbly sourdough starter added.
Mixed in my Kitchenaid, 3 folds before bed, overnight bulk on the counter - about 10 hours?
Increased morning proofing time to 2 hours
