Just bought some eggplant and feta cheese to make eggplant feta cheese balls (baked in the oven, not fried). Maybe I should switch to chicken and broccoli ;) Afaik ground flax is a good replacement for egg as a binding agent, but never tried.
The sauce with lemon juice and greek yogurt is for sure the winner! I have something similar. We eat a lot of greek yogurt. I like the texture and the taste.
Did you spray the surface with oil before baking? I've heard some bakers do that to mimic fried doughnuts.
Our vegetable fritters here have cabbage, carrot, sweet corn, and scallion in them. We usually pop them in our mouths with whole fresh bird's eye chilli pepper. Maybe with whole habanero instead! 😆
and the new you. Looks like you’re adapting well to the program and finding some good alternatives. I’m pulling for you to make your goals. I ate a lot of conch fritters in the Bahamas and loved them with ketchup, mayo and a few dashes of Crystal hot sauce

They tasted great too! The pink sauce was only a very small amount of ketchup, lemon juice and Greek yogurt. Also yummy 😋
I am almost done with the frozen whole grain wonderful bread.
Next, I will modify that formula to include ground flax.

I used canned white meat chicken, that I wanted to use up. You can use ground chicken, roughly chopped cooked chicken. Or some other protein.
Sadly I brought an eggplant recently and let it go bad in the refrigerator unused. Oh well it happens.
