I had a visit with a dietitian, an another one scheduled. She is great and will keep me accountable. She is not 100% on board with my low carb diet. However, she knows I am looking for a long term plan.
Meanwhile, without counting every carb. I am doing well. I already went down a waist size! I feel better about myself, I am in general more motivated. I go to the community pool every day and move for upwards of an hour, close to two hours even. I am not talking high energy exercise. But it's a fine start. Moving is better than not moving, feeling depressed. Smile 😁 Thanks again. I'll add the finished pizza after dinner.
Eating one slice of my wonderful bread at a time, and two for my wife. I will not need to bake the or a while. However, I am thinking my son and granddaughter will appreciate some we wonderful bread with added flax to take home!
My doc here in Australia is fully supportive of my low-carb diet. I'm a type II diabetic and my last HBA1C test was 5.4, down from 7.2 18 months ago. I still bake sough dough bread to give away to family and friends, but I occasionally sneak in a slice toasted with plenty of butter. It doesn't seem to affect my glucose spike. I've dropped 25 kg is the last two years. Keep up the good work.
Your journey is very encouraging! My hope is to also bring my A1C back down into the normal range. I have been slicing my 100% whole grain bread ultra thin. It weighs on average 40 g per slice. I have been having two- three slices per week. The next batch (for my house) won't be for a while, I have a loaf and one half left frozen. Maybe a batch for the kids. It's great that my energy level is rising, and I actually want to get up and do something. Congratulations, on your success. I appreciate your support.
How’s it going with your changes you are making? Did you get some referrals to help set up a thoughtful plan?
That crust looks great! c

I am sorry if I am a tiresome bore. However, it's all in good fun.
Thanks again Mary. The well wishes really do mean a lot to me.
