This time I decided to use cocoa paste, chocolate chips and cashews. In case it fails we can pretend it's a big brownie :D

First slice unfortunately exactly where the skewer was.

 

 

The crumb was unfortunately only very slightly shredy. Probably because at the end I added too much water (bassinage additional 5%) to the main dough. My Dallagiovanna Panettone flour obviously cannot handle as much water as I would like to. Or my process was not good enough.

But the mouthfeel was unexpected good! Very silky, "melty", similar to cotton candy, just less sweet.
