Workday 100% WW @ 90% Hydration
Hamelman's 100% whole wheat sourdough has 80% hydration.

The notes say that you can try a higher hydration if that's compatible with your baking style. I had previously baked it at 85% hydration with an added 20% of walnuts and cranberries. I wanted to try it at 85% with no additions weighing it down,
But I goofed and added 80g of water for bassinage instead of 40g, so the hydration went to 90% instead of 85%. The dough was a lot looser than usual after mixing and folding. I eventually figured out what I had done wrong.
Not surprisingly, the loaf spread more than usual. And, as one might expect, the crumb is more open

While I like a high volume loaf as much as anybody, the nice open crumb is great as a base for lox or a thick spread.
