Protein content of hard white wheat berries?
I have 3 pails of hard white wheat, totalling 170 pounds that I would like to start using for my sourdough bread.
What is the approximate protein content of these berries? Does not state on the pail
Additionally, what is difference between hard white vs hard read from a bread baking perspective? Will the hard white work for artisan bread?
If it's hard, it should have a good gluten content for making bread. No telling exactly what it is, and whole wheat protein content isn't directly relatable to white flour protein content, but it'll work just fine.
The difference between white wheat and red wheat is the color of the bran and the flavor. White wheat has a lighter color and more neutral (less bitter) flavor.
I’m not going back to hard red wheat as much since I tried hard white . Then to complicate things there is hard Spring white and hard Winter White. Spring white has the highest protein then their is winter white . I absolutely love the gluten development in just 30 min of autolyse. I never ever sift red or white. The fragrance of the white from Breadtopia will make anyone who uses it a convert. Don’t worry you have a gem of a grain. Grind, make sure to NOT sift and do an autolyse. Wonderful development with no effort. c
