Hi, does anyone have any recommendations for a pastry sheeter? I want to practice making croissants/ laminated pastries at home (it needs to be small/ compact). The machines I found online for the home baker are quite expensive so I wanted to reach out for any suggestions. Thanks so much

Once you learn to adjust to the table size limits, it works very well.

For what it’s worth, I’ve been using nothing but a rolling pin for at least 20 years of viennoiserie love. I generally make 1.75 kg (includes lamination butter) of dough for a batch of 2 dozen. Have made 2.5 kg batches, too. The dough is quite supple so, as long as the dough and the butter are roughly equally pliable, rolling is hardly difficult. Unless you’re going for really large batches, hard to see why you really need another gadget to store.
