Date paste scrolls

 In my new mixer first cab off the rank was 1800g fruit dough so about half as much again as usual. the new mixer managed it easily. I have been eating a few date recently and they are the cheapest dried fruit at our local Aldi store plus i love them  i got to think if i blitzed them in the liquidizer i could get a paste that i could use in scrolls so thats what i did, i did need to add a little water to obtain a workable paste.

dates paste showing up nicely a fine sprinkle of cinnamon sugar  was also in there. The scrolls went for our living longer living stronger exercise group on the occasion of my wife's 71 st birthday. the picture above is one of the small loaves sliced up . definitely be using the date paste again!

Gavin lots more flavour and if you like sticky date pudding its a winner, i found it was easiest to spread with your hand rather than a spoon or spatula

I love adding dates to bread.  Haven’t tried to do a swirl yet.  Looks like your new present is working out well.

Hi Ian yes on both counts the date paste works wonderfully well giving that great visual contrast as well as that delicious flavour, a bit of a sprinkle with the cinnamon sugar as well  is not detrimental to a delightful bun or slice if baking as a log. i think the paste would be a great advantage if making a rose where a long roll is split and the two halves are intertwined before coiling  to look like an opened rose bloom  as the date past is going to assist in keeping the layers together unlike the straight cinnamon sugar which tends to keep the layers separate and harder to control.

As for the new mixer yes its great, to heavy to lug around at 40kg but great to use to date i have only made 1.5kg doughs and looking forward to try a dough closer to its stated full capacity and id also like to play with a single loaf dough too just to see how effective and efficient it is.

i still have my noodle dough machine which is relatively compact and  has been great to take to baking classes that i conduct at peoples homes from time to time, i should have become an agent for those as two of my class participants have gone on to buy a machine for themselves.  Although the Spiral mixer is a single speed and bowl rotation is one direction  seem to be a problem there was another brand and  more expensive mixer that did have 2 speeds and a bigger motor but heh there always seems to be an ascending array of models and prices too.

As you know i often end up making quite a few Cinnamon scrolls and this  was a way of  making them even more yummy, i've always loved sticky date pudding so  i though blitzing some dates to make a paste for the swirls would work and it did. A bit of warm water was required to get them to mush, and as i said easiest to apply with that great tool the bakers hand.

Dates and prunes deserve to be incorporated  more than we see currently in recipes i also think some of the other dried exotics should get a run too, mmm "Mango"  Banana chips!
