Salty Rye Rolls Formula - The Rye Baker

These were delicious and took less than 3 hours start to finish.  

I grudgingly left out the molasses for health reasons (I need to avoid added sugar).  It would have improved the color and flavor.

The poke test I did at the end of proofing was unambiguous; I was afraid that I had overproofed them because the dough did not come back at all.  But I guess the test doesn't work for 60% rye.  The rolls were clearly underproofed, but still delicious.  Next time, I'll go the whole proofing time in the formula, and maybe a little more.
