Hey y'all. I just wanted to get some eyes on this and see if I am close or way off the mark in terms of how this recipe is written. Any advice would be great, thanks

Hi Rupski23,

Percentages for each section (Levain, Poolish, Main) are good. So, no problem there.

Using the full recipe that includes the Levain & Poolish at 39.99% each is ok if you use them as an ingredient. The TDW percentage would then be 232%.  As separate sections, the TDW percentage is 166%

Your total grams (weight, flour, water,) don't match your individual sections. but that's an easy fix.

I’ve added a layout I use with your gram weights. As you’ll see percentages for each section match.

In my layout columns on the left are your given weights. Columns on the right are revised weights using 1000g flour, which gives two loaves 835g each.
