The pan to box transfer was a two point landing!

Submitted for your approval, my latest performance.

The Copper Basin, Copper Mine Road special

This is a Brooklyn-style, par-baked, thick-base Sicilano pie. Extra cheese is standard ((two full pounds) of my own east coast blend. Only one optional topping is offered pepperoni. I'll tell you this people the iconic spicy spring has nothing on this masterwork!

Pepperoni is one of the things I miss the most about living in Canada.  It is just *wrong* here.  That looks amazing.  It reminds me of the little pizza place near where I grew up- Mama's had terrible sauce (pretty sure they just dumped tomato sauce from a can on to the pizza in copius amounts (ick) but her Sicilian crust was to die for.  I had been known to pull the cheese from the top, scrape off the sauce and put it back together (when no one was looking) Thanks for the memories!
