I was wondering if any of you have heard of the Puratos Sourdough Library located in Belgium? I veered into it some time ago and thought some of you sourdough enthusiasts would like to visit the site. There is an amazing amount of information about all kinds of starters, the histories behind them and their scientific composition. Super interesting!
