For the 4th: Pistachio, white chocolate and cherry Panettone

Red, White and almost Blue!

Really a delicious combination, and a pretty satisfying bake. The white chocolate chips mostly melt into the crumb, give an overall cocoa-buttery richness that goes well with the cherries. I guessed at amounts, next time will double the add-ins.

Out of interest, what's your batch size? That tub looks mega for a home bake!

Hi Michael,

I am making about a 3500 gram batch, which varies depending on how many inclusions I add. This one produced enough dough for three 1050 g loaves plus an extra 430 g baby loaf.

My FAMAG mixer is the 8 kg size, so this batch is on the small size for it, but still easy to work. My first impasto has been rizing every high, this was higher in the proof box until I took the lid off the dough box (just there to keep the dough from skinning over.

After the first batch, I decided to double the cherries and pistachios, and shorten the rise time on the second impasto a bit. Also switched to Valrhona chocolate, which is delicious.
